Thanks! That seems to have fixed it.
And, yes, the new PC has a multi-core CPU. More specifically, it has an Intel Xeon model e5620 CPU, 2.4GHz, 12mb Cache, 5.86GT/s QPI, Quad Core.

I think I've found a successful work around.
I just use a standard Windows backup (YouTube video: http://www.youtube.com/watch?v=IdDSNmX_ZFY ) of that restricted folder to my D: drive (my C: drive is an SSD drive, and D: is a hard drive), and let Carbonite back up that folder on my D: drive.

I made good progress on both Approach A and Approach B. Both seem to work fine. As you say, Approach A is easier, but only allows adding a single time series of data. Approach B allows adding 20+ data time series, but is more effort.
