Can I display a futures option in MC with IB ?
Just before I spend a ton of time I wanted to know if I can display a simples chart of futures options. I'm trying to display, for example, ES Dec16 Call 2040 but I get nothing

If you try the same chart in TWS do you see anything different? If there is data there then look into the log (open MC's Quote Manager) and see if you're getting any errors (data not subscribed, no data available, etc.).
As a generaly note, with some options and futures options there are generally no trades so you need to chart bid/ask instead.
