When I tried to add the symbol according to tutorial,there is no "eSignal"on the dropdown list.(see image)
how do I do to showing "eSignal" on that list ?

Most likely it's disabled in the list of data sources.
Open a Quote Manager window, in the main menu go to Tools->Data Sources. Find the eSignal entry in the list and if it is in Inactive state, select it and click the Activate button, then restart Multicharts.

According to my Data Sources List , eSignal is activating.
But connections are "OffLine".(see image)
I'm subscriber of eSignal,of course.
eSignal soft and eSignal Data Manager is running on my PC.
Is it DLL's BUG ?

Those connections will be activated and shown in green only when you have data of the corresponding kind (i.e. history, realtime etc.) actually downloading.
If you're able to create symbols and receive data, you needn't worry about the connection states any longer.
