but I understand if I buy 1000 Long at TK
and 10 minutes later AAPL buy then still standing since 1000 pieces.

Each chart has its own quantity value. Changing it on one chart does not affect the other. Default value for stocks is 100.but I understand if I buy 1000 Long at TK
and 10 minutes later AAPL buy then still standing since 1000 pieces.

That is correct. You are working within a single chart window. Changing one stock to the other will not change the current quantity value.
