Camtasia is by far the easiest I've found. Created all site videos with that. They have a 30 day trial, but for software like that $297 for a permanent license is definitely worth it (to me at least).

Jing is by the same folks Techsmith and free with limitations of five minute videos.
Good for capturing a tech issue and submitting for review.

Yes, Camtasia is something out of this world, but it's a professional product. If your interest is only for creating a couple of videos for showing to support, then the best program is Snagit. It's from the same software house that created Camtasia.Everything is in the title
